Ann's Caramel Popcorn ~ SINFULLY DELICIOUS!!

I got this recipe from my neighbor and I made it for my daughter's birthday party tonight. As much as the kids devoured it, I may have eaten half the batch all on my own!! ...and slightly drooled on the keyboard typing this recipe for you all right now! SOOOO GOOD!!!

20 cups popped corn
2 cups brown sugar
2 sticks butter or margarine
½ cup white karo syrup
½ tsp. Salt
2 tsp. Vanilla
½ tsp. Baking Soda
¼ tsp. Cream of tartar

Bring to a boil, sugar, margarine, karo and salt. Boil 5 minutes. Remove from heat and stir in vanilla, baking soda and cream of tartar. Mix well. Pour over popcorn. Put in large roaster. Place in 250* oven for ½ hour. Stir every 15 minutes. Pour on wax paper. Store in airtight container.

3 Packet Pot Roast

I got this recipe off of my friend's website...I get a lot of recipes off her site actually. They always have good stuff over there. Go and check it out! You won't be sorry.

I did something a little different with this one though. I added some more things. That's what I love about a crock pot pot roast, you can add so many different things.

3 Pound Chuck Roast
1 Packet Dry Ranch Dressing
1 Packet Dry Italian Dressing
1 Packet Au Jus or Beef Gravy
3 cups of water

I added:
2 cloves garlic, whole (just for flavor, you can crush them and mix them up with gravy at the end if you wish)
1 medium onion, sliced

Place 1 cup water and all three packets in crock pot. Stir together well. Then place roast in along with garlic and sliced onion and cook on low 6-8 hours. Or you can cook on high 4-5 hours. When there is 20-30 minutes left to cook add two cups hot water and put crock pot heat on high.

Enjoy.

I served with mashed potatoes and green beans.

Funnel Cake - Deep fried, of course! :D

If you want to make deep fried candy bars, you can use snickers, milky ways, three musketeers, twix or baby ruths. Make sure you freeze your candy bars then dredge them in the funnel cake batter then drop in the hot oil. Deep fry to a light to medium golden brown then remove from oil to a paper towel to drain excess oil. Serve hot. You can also do twinkies and oreos using this same recipe and process. ENJOY!! Super naughty and super good!

1 egg
2/3 cup milk
2 tbsp. sugar
1 1/4 cup flour
1/4 tsp. salt
1 tsp. baking powder


Directions:

1. In a deep skillet, heat about two cups of oil over medium-high heat until hot. Test the temperature by dropping a pinch of flour into the hot oil. If it sizzles right away without smoking, it's perfect.

2. Beat egg and milk. Mix all other ingredients in a separate bowl and slowly add to the egg mixture, beating until smooth.

3. Using a funnel, drop into hot oil working from center outwards in a web pattern. (You can use a gallon sized freezer bag instead of a funnel by pouring the batter into the bag, snipping off a small corner of it, and squeezing the batter into the oil.)

4. Cook for about 2-3 minutes, remove from the oil when golden brown and crispy.

5. Sprinkle with powdered sugar and serve.

Chicken Chalupas

5 flour tortillas
4 chicken breasts, chopped and cooked
2 cans Cream of Chicken soup
1 can chopped olives
2 cups sour cream
1 (4 oz) can green chilis
3-4 green onions, chopped (optional)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese

In a skillet, cook chicken and season with a little garlic powder and minced onion, salt and pepper. In a large bowl, mix together soup, olives, sour cream, green chilis, green onions and mozzarella cheese. Add cooked chicken and spread half the mixture between the 5 tortillas. Place in a greased 9x13 casserole dish and spread the remaining mixture on top of the tortillas. Sprinkle cheddar cheese over the top. Cover with foil and cook at 350 degrees for 40-45 minutes.

Cheddar Chicken Bake

I got this recipe from my friend, Emily. She has such good recipes on her blog. It is one that should be bookmarked for sure! I did change it a little bit by adding sour cream and more parmesan cheese and it was still really good.

8 boneless chicken breasts
1/2 cup butter, melted
4 cloves garlic, minced
3/4 c. Italian seasoned breadcrumbs
1/2 c. grated parmesan cheese
3/4 c. sour cream
1/8 tsp. pepper
1 ½ cups grated cheddar cheese

Melt butter, add garlic and sour cream. Mix breadcrumbs, parmesan, pepper and cheddar in a bowl. Dip chicken in garlic butter, then in breadcrumb mixture, coating well. Put into 9x13 baking dish. Pour any extra butter or breadcrumb mixture over chicken and bake uncovered for 45 minutes at 350 degrees.
