Sausage Alfredo Lasagna

1 (15 oz.) package Family Sized Alfredo Sauce
1 lb. bulk sausage, cooked and drained
1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
12 ounces lasagna noodles, prepared according to pacakge directions
1/4 t. ground black pepper
1 large egg, slightly beaten
2 cups shredded cheddar cheese
1 (16 oz.) container cottage cheese
1/4 cup freshly grated Parmesan Cheese
1/4 cup freshly grated Romano cheese
1 cup shredded mozzarella cheese
1/2 cup buttered bread crumbs

1. Preheat oven to 350. Lightly grease a 13x9x2 inch baking dish.
2. Combine sauce, sausage, pepper and spinach in a medim bowl. In a separate bowl, combine cheddar cheese, cottage cheese, Parmesan cheese, Romano cheese and egg.
3. Layer 1/3 of sausage mixture in prepared baking dish. Top with 1/3 of noodles and 1/3 of cheese mixture. Repeat layers twice. Sprinkle with mozzarella cheese and breadcrumbs; cover.
4. Bake for 45 min. Uncover and bake for 5 more minutes, or until breadcrumbs are golden brown. Let stand for 10 minutes.

This was a hit last night. I could not find Romano Cheese, so I just put about 1/4 cup Ricotta cheese in the cheese mixture. I had Italian style bread crumbs, so I used those in stead of buttered. My family loved it!

Cauliflower Soup ~ A MUST! So so good!!

Another hats off to Pioneer Woman! This soup will definitely become a regular at our house! Holy YUM!!

*I doubled the carrot and celery, just because I love a ton of veggies!

Mexican Pizza

My family loved this and it was pretty easy to make!

8 oz. extra-lean ground beef
1/3 cup minced onion
1 tsp. minced garlic
1/2 cup diced tomatoes
1/4 cup each grated carrot and diced green bell pepper
1/2 cup frozen or canned corn
1/4 cup canned black beans, drained and rinsed
1 tbsp. minced fresh cilantro
1 tsp. chili powder
1/2 tsp. ground cumin
1/4 tsp. each salt and freshly ground black pepper
1/2 cup pizza sauce
1 12-inch pre-baked, thin-crust pizza shell
1 cup packed shredded cheddar cheese
2 tbsp. minced green onion
Light sour cream, salsa, and guacamole (optional)

Preheat oven to 425 F.

Spray a large, non-stick skillet with cooking spray. Add beef, onion, and garlic. Cook and stir over medium-high heat until beef is no longer pink. Add tomatoes, carrot, green pepper, corn, and beans. Cook and stir for 2 minutes. Add cilantro, chili powder, cumin, salt, and pepper. Cook 1 more minute. Remove from heat.
Spread pizza sauce evenly over crust. Top with half the cheese. Spoon beef mixture evenly over pizza. Top with remaining cheese, followed by green onion.
Place pizza directly on middle oven rack and bake for 10 to 12 minutes, or until cheese is completely melted and crust is lightly browned.
Tastes great with fajita-like accompaniments such as sour cream, salsa, and guacamole.

I left off the carrots and green pepper. Add or take away as you please and you will love it!

Lori's Cranberry Crockpot Chicken

This is so super easy!!

1 can cranberry sauce
1/2 cup or more of your favorite BBQ Sauce
Enough chicken breasts or tenders to feed your family

Combine in a crockpot and cook on low for 4-6 hours.

Serve with Rice Pilaf and hot biscuits!! :)
